Falafel and Cucumber Skewers

This recipe is simple, easy and requires minimal ingredients. It works great served cold as a lunch box idea or plate up and share with friends and family for a quick and easy meal to host!

Serves: 5

Ingredients:

For the Tahini Drizzle:

  • 1/2 a cup of Tahini

  • 1 x small garlic clove

  • The juice from 1 lemon

  • 1 pinch of salt (or to taste)

  • 5-7 Tablespoons of water (to thin)

Method:

  • Pre-Heat the oven to 220°C

  • Start by making the Tahini Drizzle

    - In a blender or food processor add the Tahini, Garlic, Lemon Juice, Water and Salt

    - Blend until smooth

    - Add more water if needed to achieve desired consistency

  • Cook the Falafel as directed on the back of the packaging

  • Whilst the Falafel is baking, peel your cucumber length ways until you have 20 ribbon like pieces

  • Once the Falafel is baked its time to construct your skewers

  • Starting with a cucumber ribbon, fold the cucumber to have multiple bends and pierce it onto the skewer

  • Next pierce the Falafel onto the skewer, followed by the cucumber and continue these steps until your skewer has 3 pieces of Falafel and 5 pieces of cucumber

  • Once your Skewers are constructed, pour over the Tahini Drizzle

  • Serve Hot or Cold and Enjoy!
