Veggie Pattie Stack

Serves: 4

Ingredients:

  • Eggplant

  • Fresh Rocket

  • Capsicum

  • Halloumi

  • Aioli

Method:

Pre-Heat the oven to 220°C.

  • Whilst you are waiting for the oven to pre-heat - prep your veggies for the grill

  • Slice the Capsicum & Eggplant - lightly brush each slice with oil to ensure they will not stick to your grill pan

  • Heat your grill pan to medium-high heat

  • On a lightly oiled tray - bake the Veggie Patties for 12 minutes and then turn for a further 5 minutes

  • Once your grill pan is sufficiently hot - grill the Eggplant, Capsicum + Halloumi

  • When the Veggie Patties are ready to be removed from the oven, it’s time to assemble your stack

  • Start with the sauce layer - spread your Aioli (or whatever sauce you like) over the patty surface

  • Now begin to stack up the grilled eggplant + Capsicum slices with layers of the rocket in between

  • Top it off with the Halloumi

Enjoy your patty stack as a quick and easy delicious lunch or dinner. You can easily make this vegetarian stack Vegan too, switching the aioli for a Vegan-friendly sauce and remove the halloumi.
